Canning

I love to can, although I haven't much in the last couple of years for a multitude of reasons. I got my sister hooked on it years ago when she realized that it's pretty hard to screw up a batch of strawberry or raspberry jam. Really. And well, nothing makes a nicer and quicker impromptu gift than a lovely jar of homemade jam or fruit butter with a ribbon or cute piece of cloth wrapped around it.

(Oh, here's a tip- that jam didn't set up? Trust me- it's now the best ice cream sauce you ever had.)

This year, as summer is nosing into fall, I find I want to can again. I have a couple of seriously awesome books on preserves and butters. I've learned that you can replace some of the sugar with honey and it's just as good and even better for you.

For butters I'm looking at some crockpot recipes because they are so damn easy and low maintenance. Basically throw the ingredients into a crockpot and let cook for 8-10 hours. You want it ultra smooth, use one of those hand held immersion blenders. Then ladle into hot jars and viola, you have tasty treats.

I've done apple and pear butters. Next weekend maybe- I'm going to try cranberry-apple and pumpkin butters. Oh, and I just found a simple recipe for apricot-peach butter.  Will let you know how it comes out. Will also be making old popular standard jam recipes that I get requests for all the time- strawberry, blueberry, raspberry and mixed berry. As I noted, these make such great presents, especially at Christmas. People think you are a rock star, seriously, when in truth it really takes next to nothing to make these things.

And believe me- DC is ALL ABOUT THE EASY!!!
