8 cups pumpkin puree (if you buy it canned- it's two large cans, 1 regular one)
4 cups sugar (I replaced one cup with honey)
1 1/2 teaspoons cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
Juice of 4 fresh lemons
Put everything in the crockpot, mix well, cover and set on low. I highly advise you start this one in the morning and let it go for at least 8 hours- probably closer to 10. You want it thick and smooth. I would stir it every hour or so but that was just me. My crock pot tends to scorch in one place for some reason.
When ready, spoon into hot jars, cover and seal and flip the jars upside down for 5 minutes. Then turn them back up and this will create the vacuum you need. And tada- you have your lovely treat.
