With that out of my system, I'm gonna post a recipe here I thought came out pretty damn good. I got this at a Weight Watchers meeting so it's also good for you. It's also easy and very tasty.
Crockpot Salsa and Bean Chicken
1 pound FROZEN skinless/boneless chicken breasts
2 cans, undrained black beans
16 ounces salsa
1/2 cup brown rice
1 chopped onion (optional)
Put the FROZEN chicken in the bottom of the crockpot. Then I mixed all the other ingredients together in a bowl and poured over the top. Set for 8-10 hours and walk away.
It's that easy. And very yummy, very filling. I put a little shredded cheese on the top of mine. The chicken just falls to pieces.
I also made a chocolate Bailey's Irish Creme cheesecake to take to work tomorrow. That's still cooling and looks very good. I've made this recipe before and it came out fantastic.
And I wrote on one of my ToD stories. I got quite a bit done. I'm hoping to get a good deal more done later this evening.
