I've already had a couple of requests for this recipe and I'm thrilled! Let me give credit where it's due- Kallie had found it and I saw it on her desk and asked for a copy. It is awesome and a perfect winter dinner.
CREAM CHEESE CHICKEN- crockpot
1lb boneless, skinless chicken breast
1 10oz can cream of chicken soup
2 tablespoons margarine or butter
1 envelope spaghetti sauce seasoning
8 oz package of cream cheese (can use 1/3 less fat Neufchatel)
Place chicken in bottom of crockpot and add remaining ingredients except cream cheese. Cook on low for 6- 8 hours or on high for 3 to 4 hours. Shred chicken with fork, add cream cheese, and stir. Let stand in crockpot until heated through. Serve over rice or mashed potatoes.
Now, here are my notes. I sprayed the hell out of my crock pot with Pam. In a bowl, I mixed the soup and seasoning packet together and then I spooned that over the chicken in the crockpot. I then put two tablespoons of butter right on the top and let it go. It only took 6 hours and the meat shredded just fine. I then cut the cream cheese up in cubes, tossed it in, let that cook for another half an hour, then stirred it all together when it was melted. I used rice this time. And I also steamed a couple cups of fresh brocolli and when I was ready to serve, stirred that in. It worked really well.
I'm going to experiment with this- and try using maybe a chili seasoning packet and/or a taco one for a slightly different zing. I'm assuming you can swap out the soup for the lowfat version of cream of chicken and use that Neufchatel to cut down on the calories but I can't vouch for that yet as I haven't tried it.
